Savoury Six for the Six Nations

I have teamed up with Aldi ahead of this Saturdays Six Nation Game between Ireland and England to bring you some super quick and easy recipes that won't break the bank. Why not invite the gang around and treat them to my Savoury Six - all of which can be made using Aldi Ireland products for less than €20.

​Chili Nachos and Spicy Salsa
Ingredients:
  • 2 seeded wraps
  • 2 tsp. chili powder
  • 2 tsp. paprika
  • 1 tsp. garlic
  • 100g chopped tomatoes
Method:
  1. Preheat the oven to 180 degrees and prepare a baking tray with greaseproof paper.
  2. Slice the wraps in to bite sized triangular shaped pieces. Spread out on the baking tray and dust with 1tsp chili and 1 tsp. paprika.
  3. Place in the oven to bake for 10 minutes before flipping over and continuing to bake for a further 10 minutes or till golden and crispy.
  4. Meanwhile, prepare the spicy salsa in a blender by mixing chopped tomatoes, chili powder, paprika and garlic powder.

​Sweet potato fries and secret sauce
Ingredients:
  • 2 medium sweet potatoes
  • 1 tbsp. chili powder
  • 100g Greek yogurt
  • 2 tbsp. tomato puree
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. mixed herbs
Method:
  1. Chop the sweet potatoes in to chip shapes and par boil in a pot of water.
  2. Drain and transfer to a baking tray before sprinkling chili powder on top.
  3. Bake in the oven for 15 minutes at 180 degrees.
  4. Meanwhile, prepare the secret sauce by simply mixing Greek yogurt, tomato puree, garlic, paprika and mixed herbs.

​Sweet potato bacon bites
Ingredients:
  • 1 medium sweet potato
  • 1 ripe avocado
  • 1 unsmoked bacon medallion
  • ½ fresh lemon
Method:
  1. Slice the sweet potato in to bite sized circle shapes and bake in the oven for 20 minutes at 180 degrees.
  2. Prepare the guacamole by chopping and mashing the avocado and mixing with the juice of ½ a lemon.
  3. Fry the bacon medallion in a little oil on the pan before slicing in to small pieces.
  4. When the potatoes are crispy, remove from the oven and top with a spoon of guacamole and a few pieces of bacon.

​Mini Burger Sliders
Ingredients:
  • 300g lean beef mince
  • 1 egg
  • 2 tbsp. flour
  • 6 cherry tomatoes
  • Baby gem lettuce
  • Slice of cheddar cheese
Method:
  1. Separate the beef in to six portions and form a ball with each.
  2. Crack and whisk an egg. Dip each beef ball in to the whisked egg before coating in a little flour to bind.
  3. Fry the burgers in a little coconut oil over a medium heat on the hob.
  4. Once cooked, build your sliders by layering with cheddar cheese, lettuce and a cherry tomato on top. Hold together with a cocktail stick and serve.

​Buffalo Cauliflower Bites 
Ingredients:
  • 1 head of cauliflower
  • 2 tbsp. tomato puree
  • 2 tbsp. water
  • 1 tbsp. apple cider vinegar
  • 1 tsp. paprika
  • 1 tsp. garlic powder
Method:
  1. Preheat oven to 180 degrees and line a baking tray with greaseproof paper.
  2. In a large bowl, mix together tomato puree, water, apple cider vinegar and spices to form the marinade.
  3. Chop the cauliflower in t bite sized pieces. Coat each piece in the marinade and spread out on the baking tray.
  4. Bake in the oven for 20 minutes. Serve with secret sauce and enjoy.

​Mini Pepper Pizzas 
Ingredients:
  • 2 seeded wraps
  • 2 tbsp. tomato puree
  • Handful grated cheese
  • Bag of mini mixed peppers
Method:
  1. Use a round cookie cutter to cut the wraps in to 10-12 mini pizza bases.
  2. Bake in the oven for 10 minutes to crisp up at 180 degrees.
  3. Remove from the oven and top with a little tomato puree, grated cheese and mixed peppers.
  4. Place back in the oven and allow to cook for a further 10 to 15 minutes.
