- 2 medium eggs
- 100g chopped courgette
- Bring a pot of water to the boil. Reduce heat to a simmer and cook eggs.
- Chop courgette in to chip shapes. Cook under the grill or using a George Foreman.
- When eggs are fully cooked, place in a bowl of cold water for 1-2 minutes to prevent the shell sticking. Remove and peel off the shell.
- Seve and enjoy :)
