Apple & Cinnamon Chia Pudding

Ingredients:
  • 1 cup coconut milk
  • 30g whole chia seeds
  • 1 red apple chopped
  • 1 tsp cinnamon
  • Handful mixed seeds

Method:
  1. In an air tight container, add chia seeds and milk. Stir and leave to set in the fridge overnight.
  2. In the morning, add chopped apple and mix.
  3. Top with a sprinkle of cinnamon and mixed seeds before serving.

Gingerbread Pancakes

Pancakes: serves two
  • 100ml coconut milk
  • 100g banana
  • 1 cup gluten free oats
  • 1 tsp gingerbread spice
Gingerbread spice:
  • 2 tablespoons cinnamon
  • 2 teaspoons ginger
  • 2 teaspoons cloves
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
Method:
  1. Begin by making the gingerbread spice. Simply place all spice ingredients in to a small continer and mix to combine.
  2. Using a blender or food processor, add milk, banana, oats, spice and combine.
  3. Melt a little oil in a pancaake pan and pour enough batter to cover the base. Cook fully before flipping over to cook the other side. Repeat this process till all the batter is used up. 
  4. Stack the pancakes in a pile and top with cinnamon and a dash of honey.
