Beef Nacho Bowl

Ingredients: serves 2
  • 300g lean beef mince
  • 200ml chopped tomatoes
  • 1 sweet red pepper
  • 1 red onion
  • 50g jalapeños
  • handful baby spinach

  • 1 tbsp chilli powder
  • 2 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp mixed herbs
  • 2 BFree Sweet Potato wraps
  • Spray oil

Method:
  1. Pre-heat oven to 180 degrees.
  2. Begin by cooking the lean mince over the hob on a low heat.
  3. Once cooked, add the chopped tomatoes, spices and herbs.
  4. Chop the onion, red pepper and jalapeños in to small chunks and add in.
  5. Lower the heat and allow to simmer for 15-20 minutes.
  6. Line a baking tray with greaseproof paper and spray some oil on top.
  7. Slice the wraps in to triangular pieces and toss with cayenne pepper and paprika before arranging on the tray.
  8. Leave to cook in the oven for 15 minutes to allow to crisp up.
  9. Just before serving, stir the spinach in to the mince and allow to wilt.
  10. Place the crispy wrap tortilla chips on the plate before loading the mince on top.
