Beef Pad Thai

Ingredients:
400 g lean beef
1 sweet red pepper
1 yellow pepper
1 red onion
Handful green beans

Full Courgette
​Handful peanuts
​Coconut oil
For sauce:
4 tbsp powdered peanut butter
​(or regular peanut butter)
1/2 cup water 
2 tbsp low salt soy sauce
1 tbsp lemon juice
2 cloves of garlic
2 tbsp ginger
1 tsp curry powder
1 tsp cayenne pepper
Few fresh basil leaves

 Method:
  1. ​Cut the beef in to thin strips and fry in a little coconut oil over a medium heat.
  2. Chop up all your vegetables (excluding the courgette) and add to the pan.
  3. Add all sauce ingredients to a blender and mix together. When combined, pour in to the pan and continue to cook the curry.
  4. Using a spiralizer, create your courgette noodle. If you do not have a spiralizer, use a grater, to create long thin strips. Alternatively, Tesco stock ready made courgette noodles. There is no need to cook the noodles, once they are mixed with the sauce they will heat.
  5. When the curry is fully cooked, serve with a side of courgette noodles and top with a handful of peanuts.
