Ingredients: 400 g lean beef 1 sweet red pepper 1 yellow pepper 1 red onion Handful green beans Full Courgette Handful peanuts Coconut oil | For sauce: 4 tbsp powdered peanut butter (or regular peanut butter) 1/2 cup water 2 tbsp low salt soy sauce 1 tbsp lemon juice 2 cloves of garlic 2 tbsp ginger 1 tsp curry powder 1 tsp cayenne pepper Few fresh basil leaves |
Method:
- Cut the beef in to thin strips and fry in a little coconut oil over a medium heat.
- Chop up all your vegetables (excluding the courgette) and add to the pan.
- Add all sauce ingredients to a blender and mix together. When combined, pour in to the pan and continue to cook the curry.
- Using a spiralizer, create your courgette noodle. If you do not have a spiralizer, use a grater, to create long thin strips. Alternatively, Tesco stock ready made courgette noodles. There is no need to cook the noodles, once they are mixed with the sauce they will heat.
- When the curry is fully cooked, serve with a side of courgette noodles and top with a handful of peanuts.
