Burger in a bowl

Ingredients:
  • 2 fresh chilies - yellow and red
  • 1 clove of garlic
  • 1 full egg
  • 2-3 tbsp coconut flour or alternative
  • 1 red onion
  • 500g turkey mince
  • 1 large sweet potato
  • 1 bag of mixed greens

Method:

  • Melt some coconut oil in a pan over the hob. Using a pestle and mortar, combine the chilies and garlic and add this to the pan.
  • Crack the egg in to a bowl and whisk.
  • Pour the coconut flour on to a dish or chopping board.
  • Chop up the onion in to small pieces.
  • Using your hands, split the turkey mince in to burger sized portions. Add some of the chopped onions and create your burger shape. Dip your burger in to the whisked egg and then roll in the flour. Leave to one side and repeat till you have made the desired number of burgers.
  • Your pan should be nice and hot at this stage. Seal the burgers on both sides and then allow to fully cook. 
  • Using a peeler, create long strips of the sweet potato. Add this to the pan along with the remaining chopped onions.
  • Place your mixed leaves in a bowl and top with the sweet potato and onion mixture, followed by your turkey burger.
