Chicken Satay & Curried Caulirice

Warm up with this spicy chicken satay made with Bell Plantation: PB2 Powdered Peanut Butter and a side of curried vegetable Cauliflower Rice.
Curry ingredients: serves two
  • 2 large chicken breasts
  • 2 cloves of garlic
  • 1/2 onion 
  • ​handful spinach
  • 100ml coconut milk
  • 2 tbsp powdered peanut butter
  • 1 tbsp braggs aminos or soy sauce
  • 1 tbsp olive oil
  • 1 tsp curry powder
  • 1 tsp ginger
  • 1 tsp cumin
  • ​1 tsp chili
Cauliflower rice:
  • 200g cauliflower rice
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 tsp chili
  • 100 snap peas
  • ​1 red pepper
Method:
  1. Melt a little oil in a pan and to this add chopped onion and garlic. Cook for 2-3 minutes.
  2. Chop the chicken in to cubes and add to the pan. 
  3. In a separate bowl, prepare the satay sauce using all ingredients listed above.
  4. When the chicken is fully cooked, reduce the heat, add the satay sauce and allow to simmer for 10 minutes. 
  5. In a separate pan add the cauliflower rice and spices and toss to ensure all the rice is coated. Add the snap peas and red pepper and cook for 5-10 minutes.
  6. Add spinach to the satay, just before serving and stir till wilted.
