Ingredients: Serves 4
- 400g turkey mince
- 1 can chopped tomatoes
- 1 can adzuki beans
- 250g green beans
- 1 large red pepper
- 2 spring onions
- 10 cherry tomatoes
- 1 clove garlic
- 1 tsp chilli powder
- 1 tsp paprika
- 1 tsp mixed herbs
Method:
Serve and enjoy with some brown rice or crunchy quinoa.
- Begin by placing turkey mince in a large pot, with a little water, and cooking fully.
- Once cooked, add can of chopped tomatoes along with herbs, spices and chopped garlic.
- Reduce heat and allow to simmer for 10-15 minutes.
- Chop all vegetables finely and add to the pot. Cook for a further 5 minutes.
- Drain the adzuki beans and rinse under cold water. Add the pot, cover and allow to cook for 5 minutes.
Serve and enjoy with some brown rice or crunchy quinoa.
