Chilli Con Carne

Ingredients: Serves 4
  • 400g turkey mince
  • 1 can chopped tomatoes
  • 1 can adzuki beans
  • 250g green beans
  • 1 large red pepper
  • 2 spring onions
  • 10 cherry tomatoes
  • 1 clove garlic
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 tsp mixed herbs
Method:
  1. Begin by placing turkey mince in a large pot, with a little water, and cooking fully.
  2. Once cooked, add can of chopped tomatoes along with herbs, spices and chopped garlic.
  3. Reduce heat and allow to simmer for 10-15 minutes.
  4. Chop all vegetables finely and add to the pot. Cook for a further 5 minutes.
  5. Drain the adzuki beans and rinse under cold water. Add the pot, cover and allow to cook for 5 minutes. 

Serve and enjoy with some brown rice or crunchy quinoa.
