Method:
- Dice the chicken and fry in a little coconut oil over a medium heat.
- When cooked, chop up all your vegetables and add to the pan.
- Add all sauce ingredients to a blender and mix together. When combined, pour in to the pan and continue to cook the curry.
- Boil brown rice in a pot as per directions on the packet.
- Serve and enjoy :)
