Clean Chicken Curry

Ingredients:
  • 1 chicken breast per person
  • 1 large red pepper
  • 3-4 spring onions
  • Handful broccoli stalks
  • Handful snap peas
  • ​Handful mangetout
  • Brown rice
Sauce ingredients:
  • 250 ml water
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp tumeric
  • 1 tsp chilli powder
  • 1 tsp cayenne pepper
  • ​2 cloves garlic
Method:
  1. Dice the chicken and fry in a little coconut oil over a medium heat.
  2. When cooked, chop up all your vegetables and add to the pan.
  3. Add all sauce ingredients to a blender and mix together. When combined, pour in to the pan and continue to cook the curry.
  4. Boil brown rice in a pot as per directions on the packet.
  5. Serve and enjoy :)
