Crispy Coated Cod

Ingredients:
  • 1 portion fresh cod per person
  • 1 large egg
  • 50 g ground almonds
  • ​2 tbsp nutritional yeast
  • ​1 can of peas
Tartar Sauce Ingredients:
  • 2 tbsp Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp cidar vinegar
  • 1 tbsp mustard seeds
  • 1 tsp dill
  • ​1 tsp capers
Method:
  1. Prepare the cod by firstly cutting in to portions. Crack the egg in to a bowl and whisk. In a separate bowl, mix together ground almonds and nutritional yeast.
  2. Taking 1 portion of fish at a time, dip in the egg and then coat with the ground almonds.
  3. Fry over the hob with a little coconut oil till fully cooked on the inside and crispy on the outside.
  4. Cook the peas over the hob as per directions on the tin. Mash to make mushy.
  5. For the sauce, grind the capers and mustard seeds using a pestle and mortar. Then add to a bowl and combine with the remaining ingredients.
