- 1 whole wheat tortilla per pizza
- Mexican pulled chicken (click for recipe)
- 1/4 cup chopped tomatoes
- 2 tbsp tomato puree
- 1 large sweet red pepper
- 1/4 cup jalapenos
- 1 red onion
- Handful rocket
- Handful grated cheese
Method:
- Preheat oven to 180 degrees.
- Place tortillas on a wire rack and leave in the oven for 5 minutes to crisp up.
- Remove from the oven and top with chopped tomatoes and tomato puree mixture.
- Load on the toppings - pulled chicken, red pepper, red onion and jalapenos.
- Finish off by sprinkling the grated cheese on top.
- Place back in the oven and cook for a further 10 to 15 minutes or till the cheese has melted. I also like to place under the grill for 2 to 3 minutes to add that extra crisp.
