- 2 large carrots
- 1 medium courgette
- 1 mini orange pepper
- 1 mini yellow pepper
- 1 clove of garlic
- 1 inch cube of ginger diced
- 1 fresh chilli
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp garam masala
- 1/2 lime, juiced
- 100ml dairy free milk
Instructions
- Add a little oil to a pan.
- Using a pestle and mortar, beat and combine the ginger, garlic and chili and add to the pan.
- Allow to cook for 2-3 minutes before adding the vegetables and other spices.
- When the carrots begin to cook and reduce add the dairy free milk.
- Cook for a further 5 minutes on a low heat.
- Enjoy with rice or as a side dish.
