Sri Lankan carrot salad

Ingredients:
  • 2 large carrots
  • 1 medium courgette
  • 1 mini orange pepper
  • 1 mini  yellow pepper
  • 1 clove of garlic
  • 1 inch cube of ginger diced
  • 1 fresh chilli
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1/2 lime, juiced
  • 100ml dairy free milk

Instructions
  1. Add a little oil to a pan.
  2. Using a pestle and mortar, beat and combine the ginger, garlic and chili and add to the pan.
  3. Allow to cook for 2-3 minutes before adding the vegetables and other spices.
  4. When the carrots begin to cook and reduce add the dairy free milk.
  5. Cook for a further 5 minutes on a low heat.
  6. Enjoy with rice or as a side dish.​
