- 4 ripe bananas
- 100 ml coconut oil
- 50 ml honey or agave syrup
- 2 tsp stevia
- 200g buckwheat flour
- 1 tbsp chia seeds
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 bar of 85% raw chocolate
- For this recipe I used Magic Mayan Black Magic
- Preheat oven to 180 degrees and line a bread tin with greaseproof paper.
- In a large bowl, peel and mash 3 bananas till all lumps are removed.
- Melt the coconut oil and honey together before adding to the mashed bananas.
- In a separate bowl, mix together buckwheat flour, baking powder, baking soda, chia seeds and stevia.
- Slowly pour the flour mixture in to the banana mixture and stir well.
- Chop the chocolate in to small chunks and stir in along with 1tsp of cinnamon.
- Pour the mixture in to the bread tin and press down firmly.
- Slice the remaining banana lengthways in half and place on top of the mix.
- Bake in the oven for 50 minutes till golden brown.
- Remove and allow to cook on a wire rack before slicing.
