Pumpkin Oat Muffins

Ingredients:
1 1/2 cups coconut flour
1 cup o
2 tbsp baking soda
2 tbsp pumpkin pie spice (See previous post for homemade recipe)
3 egg whites
2/3 cup milk or milk alternative
1 cup pumpkin puree
1/3 cup of honey/agave
1 banana
Optional: Dark chocolate chips

Method:
1. Preheat oven to 180 degrees and line bun cases with a little oil to prevent sticking.
2. In a bowl mix flour, oats, spice and baking soda. In a separate bowl, combine pumpkin, banana, milk, egg whites and honey.
3. Combine both mixtures. Fold in dark chocolate chips if applicable.
4. Transfer mixture in to bun cases and place in the oven for 30 minutes.

Serve warm 😋

This looks delicious for me. Pumpkins are perfect ingredients for snacks or desserts. I love pumpkin cake and pumpkin cookies so I guess I'll try this one. I'll just read your recipe for the pumpkin pie spice then I'm good to go. I just hope that it would turn out delicious.
