Vegan Chocolate Banana Nut Bread

Wet Ingredients:
  • 3 medium bananas
  • 1/2 cup coconut milk
  • 1/3 cup coconut oil (melted)
  • 4 tbsp Wyldsson Hazelnut & Cocoa Spread 
  • ​1 tsp apple cider vinegar
Dry Ingredients:
  • ​1 + 1/4 cup gluten free flour of choice
  • (I used buckwheat in this recipe)
  • ​1/2 cup raw cacao powder
  • 1 tsp gluten free baking soda
  • ​1/2 tsp gluten free baking powder

Method:
  1. Preheat oven to 180 degrees.
  2. Using a food processor, add all dry ingredients and blend together.
  3. In a bowl, mash the bananas. Melt the coconut oil and hazelnut spread and add to the mix, along with all the remaining wet ingredients. Mix together by hand.
  4. Add the wet mixture in to the blender with the dry ingreients and mix to form the batter for the bread.
  5. Transfer the batter to a silicone bread dish, or line a baking dish with greaseproof paper. Fill with the batter and leave to bake in the oven for 30 minutes.
  6. Test by placing a cocktail stick in to the centre of the bread. If it comes out clean, your bread is ready. Otherwise leave to bake for a further 5-10 minutes.
