- 1 large carrot
- 20g pumpkin seeds
- 10g sesame seeds
- 2 tbsp fresh chopped parsley
- 2 tsp extra virgin olive oil
- 1 tsp apple cider vinegar
- Using a grater, finely grate the carrot in to long, thin strips.
- Place in a bowl with seeds and chopped parsley.
- In a separate bowl, combine the olive oil and apple cider vinegar. Pour this mixture on top of the carrot mixture and ensure all contents are fully coated.
Use as a side dish with your favorite meat or enjoy on its own.
