- 200g chicken fillet
- 100g chorizo
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1/2 courgette
- 1/2 red onion
- 1 tbsp bbq seasoning
- 1 tsp chilli powder
- 1 tsp paprika
- 1 tbsp olive oil
Method:
- Prepare your chicken by slicing in to chunks and pre-heat oven to 180 degrees.
- Make a marinade by combining BBQ seasoning, chilli, paprika and olive oil in a bowl.
- Coat your chicken in the marinade and leave to soak for 30 minutes.
- Place the chicken in an oven proof dish and cook in the oven for 30 minutes.
- Chop up all your veggies and chorizo in to chunks.
- When the chicken is cooked, begin to build your skewers.
- Place the skewers back in the oven or transfer to the BBQ to cook for a further 20 minutes.
