BBQ Skewers

Ingredients:
  • 200g chicken fillet 
  • 100g chorizo
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 1/2 courgette
  • 1/2 red onion
  • 1 tbsp bbq seasoning
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 tbsp olive oil

Method:
  1. Prepare your chicken by slicing in to chunks and pre-heat oven to 180 degrees.
  2. Make a marinade by combining BBQ seasoning, chilli, paprika and olive oil in a bowl.
  3. Coat your chicken in the marinade and leave to soak for 30 minutes.
  4. Place the chicken in an oven proof dish and cook in the oven for 30 minutes.
  5. Chop up all your veggies and chorizo in to chunks.
  6. When the chicken is cooked, begin to build your skewers.
  7. Place the skewers back in the oven or transfer to the BBQ to cook for a further 20 minutes.
