Ingredients: serves 4
Method:
- 1 large butternut squash
- 1 red onion
- 2 sweet red peppers
- 8 cherry tomatoes
- 4 cloves garlic
- 1 tbsp ginger
- 1 tbsp turmeric
- 1 tbsp paprika
- 150ml water
Method:
- For this recipe, I used a soup marker. If you have one of these hidden at the back of the cupboard, simply throw all ingredients in together and watch it cook itself.
- If you do not this soup can just as simply be made on the hob.
- Place all ingredients in a large pot, cover and cook on a medium heat for 20 minutes, till ingredients soften and start to reduce.
- Use a hand blender, to grind down the ingredients, stir and continue to cook for a further 10 minutes before reducing the heat and allowing to simmer for at least an hour till the desired consistency is achieved.
