Butternut Squash & Red Pepper Soup

Ingredients: serves 4
  • 1 large butternut squash
  • 1 red onion
  • 2 sweet red peppers
  • 8 cherry tomatoes
  • 4 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp turmeric
  • 1 tbsp paprika
  • 150ml water

Method:
  1. For this recipe, I used a soup marker. If you have one of these hidden at the back of the cupboard, simply throw all ingredients in together and watch it cook itself.
  2. If you do not this soup can just as simply be made on the hob.
  3. Place all ingredients in a large pot, cover and cook on a medium heat for 20 minutes, till ingredients soften and start to reduce. 
  4. Use a hand blender, to grind down the ingredients, stir and continue to cook for a further 10 minutes before reducing the heat and allowing to simmer for at least an hour till the desired consistency is achieved.

The butternut squash red pepper is a recipe that everyone would love. I cooked it when we had a family gathering and they say that it is fantastic and really delicious.
