- 2 x chicken fillets
- 100g Gluten Free pasta
- (I used Leaves Buckwheat & Chickpea Pasta)
- 1 medium avocado
- 100g chopped broccoli
- 100ml coconut milk
- 1 clove garlic
- 1 tsp mixed herbs
Method:
- Begin by preparing your chicken as usual, in the oven, on the hob or under the grill.
- Bring a pot of water to the boil, add the pasta and allow to cook for 10 minutes.
- Chop the broccoli and place in a sieve to steam over another pot of boiling water.
- Using a blender or food processor, prepare the creamy sauce. Chop the avocado and add coconut oil, garlic and mixed herbs. Blend till fully combined.
- When the pasta and broccoli is fully cooked, remove from the heat and strain.
- Heat a pan on the hob and add creamy sauce along with pasta and broccoli and cook for 3-5 minutes.
