Creamy Chicken & Avocado Pasta -          Gluten and Dairy Free

Ingredients: serves two
  • 2 x chicken fillets
  • 100g Gluten Free pasta
  • ​(I used Leaves Buckwheat & Chickpea Pasta)
  • 1 medium avocado
  • 100g chopped broccoli
  • 100ml coconut milk
  • 1 clove garlic
  • 1 tsp mixed herbs

Method:
  1. Begin by preparing your chicken as usual, in the oven, on the hob or under the grill.
  2. Bring a pot of water to the boil, add the pasta and allow to cook for 10 minutes.
  3. Chop the broccoli and place in a sieve to steam over another pot of boiling water.
  4. Using a blender or food processor, prepare the creamy sauce. Chop the avocado and add coconut oil, garlic and mixed herbs. Blend till fully combined. 
  5. When the pasta and broccoli is fully cooked, remove from the heat and strain.
  6. Heat a pan on the hob and add creamy sauce along with pasta and broccoli and cook for 3-5 minutes.
Serve and enjoy :)

People love to eat and some people are always looking for a meal that is tasty enough that will make their lunch or dinner special. Those foods that are prepared are all different in their own way and to know the recipe of this meal is special for me because there are some meals that are not open to the public. I want to know more about it. There are other recipes that also uses a chicken as a major ingredient.
