- 100g uncooked quinoa
- Handful chopped kale
- 50g dried cranberries
- 50g goji berries
- 1 tsp apple cider vinegar
- 1 tsp olive oil
- 1 tsp salt
- 1/2 fresh lemon
Method:
- Begin by preparing the quinoa. Add to a pot along with enough boiling water to cover the quinoa. Place the lid on top and allow to soak for 10 minutes.
- While waiting, move on to prepare the kale. Place the chopped kale in a large bowl along with apple cider vinegar, olive oil and salt. Massage the kale with the liquid for 2 minutes and then leave to one side.
- Cook the quinoa on a low heat on the hob. When the majority of the water has been absorbed, squeeze half a lemon and leave to cook for a further 2-3minutes.
- Remove from the heat and add to the bowl of kale. Toss in the dried fruit and serve.
