Festive Fitness Salad

Ingredients: serves 3-4
  • 100g uncooked quinoa
  • Handful chopped kale
  • 50g dried cranberries
  • 50g goji berries
  • 1 tsp apple cider vinegar
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 fresh lemon

Method:
  1. Begin by preparing the quinoa. Add to a pot along with enough boiling water to cover the quinoa. Place the lid on top and allow to soak for 10 minutes.
  2. While waiting, move on to prepare the kale. Place the chopped kale in a large bowl along with apple cider vinegar, olive oil and salt. Massage the kale with the liquid for 2 minutes and then leave to one side.
  3. Cook the quinoa on a low heat on the hob. When the majority of the water has been absorbed, squeeze half a lemon and leave to cook for a further 2-3minutes.
  4. Remove from the heat and add to the bowl of kale. Toss in the dried fruit and serve.

This salad looks very tasty. I'm currently taking a diet for my special fitness program. This kind of salad is essential for my routine. I'm going to try this out, when I get back home. I'm really excited to make this, so I'll be preparing the ingredients as soon as possible.

Very interesting blog. Alot of blogs I see these days don't really provide anything that I'm interested in, but I'm most definately interested in this one. Just thought that I would post and let you know.

Too many people project their hopes on the "magic" supplement to solve all their health problems. Supplements are called that because they supplement your lifestyle. They do not substitute for having a healthy one.
