Ingredients: serves two
Method:
- 2 x turkey burgers
- 2 x large flat mushrooms
- 100g chopped carrots
- 100g chopped courgette
- 1 medium avocado
- 4 cherry tomatoes
- 1/4 cucumber
- Handful mixed leaves
- 1 fresh lime
- 1 tsp chilli powder
- 1 tsp garlic powder
Method:
- Pre-heat the grill to 160 degrees. Cook turkey burgers under the grill, flipping after 10 minutes to ensure both sides are fully cooked.
- In the meantime, chop carrot and courgette in to chip shapes. Bring a pot of water to boil and cook the vegetables for 8-10 minutes or till soft.
- Place mushrooms under the grill and cook on both sides for 3-5 minutes.
- Chop the avocado and use a fork to mash in a bowl. Add the juice of one lime, along with garlic and chilli powder. Mix to combine.
- Once fully cooked, remove burgers and mushroom bun from the grill and place on serving dish. Top with guacamole.
- Chop tomato and cucumber to garnish along with mixed leaves.
- Serve and enjoy :)
