Ingredients - serves 3-4:
Method:
- 600g sweet potato
- 100ml coconut milk
- 1 tsp curry powder
- 1 tsp tumeric
- 1 tsp ginger
Method:
- Peel and chop the sweet potato in to small cubes. Place in a pot of water and bring to the boil.
- When soft, remove from the heat, strain and place back in to the pot.
- Add the coconut milk and spices before mashing in to a smooth mix.
