Gluten Free Sage & Onion Stuffing

Ingredients:
1 cup quinoa
1 cup diced celery
1 cup butternut squash cubed
1 white onion chopped
Handful of fresh chopped sage
Handful mixed seeds
2 tbsp coconut oil


​Method:
1. Cook quinoa in a pot till all the water is absorbed and it is light and fluffy.
2. In a baking dish, place chopped butternut squash with coconut oil, cover with tinfoil and cook in the oven for around 30 minutes till soft.
3. In a pan, fry the celery and onion till soft.
4. Add the onion, celery, sage and cooked quinoa to the butternut squash in the baking dish.
5. Leave uncovered and place the dish back in the oven to allow the stuffing to toast and crisp up.
