Kale & Sweet Potato Mash

​Ingredients:
  • 2 large sweet potatoes
  • 1 bag of kale
  • 1/4 cup of milk or almond milk
  • 2 tbsp coconut oil

Method:
  1. Preheat the oven to 180 degrees and line a baking tray with tin foil.
  2. Prepare the sweet potato by peeling and cutting in to small thin slices.
  3. Melt the coconut oil and use to coat the sweet potato.
  4. Spread the sweet potato out on the baking dish and leave to cook in the oven for 35 minutes or till soft (test with a fork).
  5. Chop up the kale really finely. I like to throw it in to my Nutribullet.
  6. Heat the milk on the hob and add the sweet potato before mashing. Add in the kale and mash again.

Serve and enjoy :)
