- 2 large sweet potatoes
- 1 bag of kale
- 1/4 cup of milk or almond milk
- 2 tbsp coconut oil
Method:
- Preheat the oven to 180 degrees and line a baking tray with tin foil.
- Prepare the sweet potato by peeling and cutting in to small thin slices.
- Melt the coconut oil and use to coat the sweet potato.
- Spread the sweet potato out on the baking dish and leave to cook in the oven for 35 minutes or till soft (test with a fork).
- Chop up the kale really finely. I like to throw it in to my Nutribullet.
- Heat the milk on the hob and add the sweet potato before mashing. Add in the kale and mash again.
