Chocolate Chunk Protein Bars

Ingredients:
  • 1 cup oats
  • 1/2 cup chocolate protein powder – I used a casein version
  • 1/4 cup pure cocoa powder
  • 1 cup dates, pitted and soaked for 30 minutes
  • 1/2 cup + 1/4 cup chopped mixed nuts, divided
  • 1 tsp vanilla extract
  •  water as needed (up to 1/4 cup)
  • Handful cacao nibs
  • 75% dark chocolate to pour on top if needed

Method:
  1. In a blender grind up the oats until they are a fine flour. Add protein and cocoa powders and blend again until well combined.
  2. Drain and rinse the dates then add them to the blender with 1/2 cup of nuts and vanilla. Blend again, adding a little water at a time, until a dough forms.
  3. Transfer dough to a bowl, stir in the remaining 1/4 cup of nuts along with handful of cacao nibs if using.
  4. Pour the mixture into a lined tray and press down into a compact layer.
  5.  If using the dark chocolate, melt and pour in an even layer on top.
  6. Place the tray in the refrigerator for 2-3 hours, allowing them to firm up before cutting into equal pieces.
