- 1 cup oats
- 1/2 cup chocolate protein powder – I used a casein version
- 1/4 cup pure cocoa powder
- 1 cup dates, pitted and soaked for 30 minutes
- 1/2 cup + 1/4 cup chopped mixed nuts, divided
- 1 tsp vanilla extract
- water as needed (up to 1/4 cup)
- Handful cacao nibs
- 75% dark chocolate to pour on top if needed
Method:
- In a blender grind up the oats until they are a fine flour. Add protein and cocoa powders and blend again until well combined.
- Drain and rinse the dates then add them to the blender with 1/2 cup of nuts and vanilla. Blend again, adding a little water at a time, until a dough forms.
- Transfer dough to a bowl, stir in the remaining 1/4 cup of nuts along with handful of cacao nibs if using.
- Pour the mixture into a lined tray and press down into a compact layer.
- If using the dark chocolate, melt and pour in an even layer on top.
- Place the tray in the refrigerator for 2-3 hours, allowing them to firm up before cutting into equal pieces.
