Fig and biscuit nice cream

Ingredients:
  • 400ml can of coconut milk
  • 100ml tahini
  • 1 tbsp honey
  • 1 tbsp cinnamon
  • 1 Aldi Ireland gluten free ginger nut biscuit
  • 6 Foods of Athenry chocolate cookie shots

Method:
  1. Using a blender, mix coconut milk, tahini, honey and cinnamon till smooth.
  2. Smash biscuits using a rolling pin and stir in by hand.
  3. Pour the mixture in to a large container.
  4. Set in the freezer for 2-3hours.
....and that is it! It really is that simple.
