Matcha Macaroons

Ingredients: makes 16 macaroons
  • 2 cups desiccated coconut
  • 1 cup unsweetened almond milk
  • 2 tbsp coconut flour
  • 2 tbsp stevia or other sweetener
  • 1 tsp matcha
  • ​dark chocolate for decoration
Method:
  1. Preheat oven to 180 degrees and line a tray with grease proof paper.
  2. In a saucepan, mix together almond milk and stevia and gently heat for 3-4 minutes.
  3. Add coconut flour and matcha and stir till smooth.
  4. Increase the heat and bring to the boil. Continue to boil for 3-4 minutes till the mixture starts to thicken.
  5. Remove from the heat and stir in the desiccated coconut, ensuring everything is fully coated.
  6. Scoop out a tablespoon of the mixture at a time to form your macaroons. 
  7. Line them on the baking tray and bake for 20 minutes or till golden brown.
  8. ​Remove from the oven and set to one side to cool. 
  9. Melt some dark chocolate and use to decorate your macaroons.

i love this recipe soo much i first thought it will be weird but its the best thing ever im addicted
