Ingredients: makes 16 macaroons
- 2 cups desiccated coconut
- 1 cup unsweetened almond milk
- 2 tbsp coconut flour
- 2 tbsp stevia or other sweetener
- 1 tsp matcha
- dark chocolate for decoration
Method:
- Preheat oven to 180 degrees and line a tray with grease proof paper.
- In a saucepan, mix together almond milk and stevia and gently heat for 3-4 minutes.
- Add coconut flour and matcha and stir till smooth.
- Increase the heat and bring to the boil. Continue to boil for 3-4 minutes till the mixture starts to thicken.
- Remove from the heat and stir in the desiccated coconut, ensuring everything is fully coated.
- Scoop out a tablespoon of the mixture at a time to form your macaroons.
- Line them on the baking tray and bake for 20 minutes or till golden brown.
- Remove from the oven and set to one side to cool.
- Melt some dark chocolate and use to decorate your macaroons.
