- 2 tbsp melted coconut oil
- 1 tbsp cayenne pepper
- 2 large carrots
Method:
- Preheat oven to 220 degrees.
- In a bowl combine oil and spices.
- Chop carrots finely or use a potato peeler to create thin strips of carrot.
- Toss in the oil and spice mixture and fully coat.
- Place on a baking tray and cook in the oven for around 15 minutes or till crispy. Watch closely as the carrots can burn easily as they are so thin
